Our Story
Magic Mushroom Kombucha began as a quiet experiment — a glass jar on a kitchen counter, black tea, sugar, and a SCOBY that felt more like a living thing than an ingredient. What started as weekend brewing became a devotion to the slow, invisible work of fermentation.
We brew in small batches, always. No shortcuts, no pasteurization, no artificial anything. Just good tea, real fruit, time, and the kind of care that shows up in every bottle. Our Walworth taproom is where that process meets the people who come for a taste — and stay for the community.

The Process
Great kombucha can't be rushed. Here's what happens between the tea leaves and your glass.
We start with high-quality loose-leaf tea, filtered water, and organic cane sugar. The tea steeps until it reaches the perfect strength — never bitter, always balanced. This is the foundation everything else builds on.
Once cooled, the sweet tea meets our SCOBY — the symbiotic culture of bacteria and yeast that does the real work. Over 7 to 14 days, it transforms sugar into organic acids, trace minerals, and living probiotics. Patience isn't a virtue here; it's a requirement.
After primary fermentation, we add real fruit — fresh, frozen, or occasionally dried — for a second fermentation that builds natural carbonation and deepens the flavor. No juice concentrates. No artificial flavors. Just fruit doing what fruit does.
Every batch is tasted and approved before bottling. We bottle at peak carbonation and flavor, then refrigerate to preserve the living culture. The result is a drink that's effervescent, complex, and genuinely alive — just like it should be.
